Download Theme release file, and unzip.
Move the Simple folder to the EFI\CLOVER\themes folder.
Open the EFI\CLOVER\themes\config.plist file.
Search <key>Theme</key>.
Change <string>…</string> to <string>Simple</string>.
Done.
